I looked at the 2019 tune vs my 21 tune and its different as well. Mine has a tad less of the pops I assume from the more mild settings, but moreso than the 17 does.

That would be a nope. There is no stock gm tune in existence that only changes the pops & crackles part (in the minimum final spark table), and the dealership will never perform custom, warranty voiding tuning for you.

For my application, would changing the tune to accentuate the snap/crackle/pop affect the overall tune?

I don't think it would affect much else, but we need to ask an actual tuner who has tried this, I'm just a member here
