How many miles to shake out any demons?

Better said, what's the history of this transmission, clutch assembly, and engine? We aren't flying in the wind with new components are we or are we?

I want to start modding.

Well the LT1 motor has been tried and tested for a while with the Corvettes. I'm not sure about the transmissions. I'm sure others would know

The TR6060 is a very capable transmission. It's been used in high performance vehicles for quite a while now with problems being rather rare. The LT1 has had some failures, but in the grand scheme of things it's happened to less than 1 in 1000 built so far.

Engine - I have no concerns, GM has had this small block for a while and it's in the vette

Transmission - Haven't heard of too many failures, but the A8 is fairly new isn't it?

Rear End - My only concern in the power train is the rear diff, I had the grown, went to dealer, they told me the clutches in the rear diff were just sticking so they drained the fluid and replaced it, noise came back (not as bad) and they told me that's normal. My faith in the rear has me worried.

You're going to need a pretty solid setup to hang with a Dodge Demon.

I'm kidding, of course. I broke my car in and then modded a little. No issues on my trans with 12K miles of driving a solid 11 second daily driver. The car is raced a few times a year.
