Change oil at 1500 miles... Thats what they do with the Corvettes.

I babied it first 500 miles then began progressively getting into it.

The manual doesnt say to baby it, it says not to go WOT from a standstill, you can still go WOT just avoid going over 4000rpm, there is still fun to be had

Where did you read that? Don't see that in my manual.

Most engine builders recommend the second style break in you listed. However, if you do that and Chevy finds out, they'll claim invalid warranty. Yes, On Star is watching...
Asking for "On Star" trouble is what Chevy is all about? Glad I own a Mustang, and mine is broken in just fine.

I drove it according the manual for the first 500 miles. Then I drove it hard but without going more than 1-2-3 gears at WOT. After 1000 miles I changed the oil and drove it like I stole it. 8000 miles and the car still purrs and doesn't burn a drop of oil.

On star is not watching your break in procedure...../What paranoia… The only thing that would come up is overspeeds in the ECM, if there was a problem. Which means how many times you hit the limiter…

I used the most complicated break-in process of anyone I know:

I drove the car for the first 1500 miles just like I drive the car now that it has 12,500 miles on it.

Normal and reasonably calm driving most all the time so I don't get arrested and then on every drive I find one or two spots to rip through the gears where I think I can get away with it safely. It uses no oil between changes and runs like a beast.

Yes. This.

The guy's business practices are shady as hell. His business comes from people who haven't done their due diligence.

There are half a dozen world-class shops that build fast American cars within an hour's drive of Henessey's place; why people continue to give that hustler their cash is beyond me. When I went to TX2K and talked to people, his name was mud.
