I can't say how it would fair against a 2017 1LE - but I did some laps against a 2015 1LE and the guy couldnt keep up. To OP:
I honestly think SS should get much closer to 1LE time (assuming same driver) with just wheels and tires upgrade - using lighter and wider track wheels, and Cup2s. 1LE vs SS with lighter/wider wheels and Cup2, I think SS should shave 2 seconds off of those 3 second difference. I'm still debating if I want to get 3rd set of wheels (1LE replica) and go with Cup 2s or stick with stock wheels and push them out a bit with spacers and go with RE71Rs. 1st option will be faster but definitely lot more costly.....

I know RE71's are great for autocross, How do they work for trackdays? Do they hold up like R-S3's? I hear they wear very fast. The price is pretty good if they work better than the Rs3's at the track and last at least 5000 doing dual duty, street and a few track / autocross days, I might go that route. Cup 2's are probably too expensive for dual duty unless you use them only at the track. For me at least. Or wait and see how much the new 1LE tires cost.

They do come in 305's. I have them on my car right now. You were probably told that they don't because they're supposed to be "Ferrari exclusive". The only way to get them is to walk into a Ferarri dealership or go to Tire Rack:

Wow! Reading all this is getting me pumped up to go to the track. My car is all stock right now and it only has 500 miles on it. I cant wait to get it out on the track. Chuckwalla, Autoclub Willow Springs and Buttonwillow are all on my bucket list. I've hit a few of them on bikes and in my miata, but 455 hp is going to be a world of difference. I want to buy things once and be done with it. RS3's ?? RE71?? Stock wheels?? 1LE replicas's?? brake pads ??? 1LE suspension upgrade when it comes out. ?? Lots of things to think about.

SS 1LE is the fastest Camaro ever tested at Laguna Seca.
Motor Trend just tested the SS 1LE as a part of their hunt for the best driver's car. It broke all the records for Camaros in every area including stopping distance, figure 8, quarter mile, and it earned the lowest time around Laguna Seca with Pobst posting a lap time of 1:37.78 with the 2017 Camaro SS 1LE (he went 1:37.82 with the 5th gen Camaro Z/28). Spoiler alert, it won honorable mention as the 4th best choice. The complaint was the overall taller gearing (especially 3rd) and the long(ish) brake pedal travel.
