So my roommates wrote a check to a Litha car dealer so they can use it as a hold until Litha got a check from I think my roommates insurance cuz of some over payment or something for the first payment and 2nd payment or whatever. My roommates told them they dont have the cash in the bank for the check.

The dealer told them they wont cash the check just needed for I guess collective. And somewhere between they wrote Litha anthoer check cuz the first one will be expire so they can keep the hold until the insurance paid.
Im not to sure how all of this works or if this make sense but now the worse of the situation has happen. Litha is telling them they are going to cash the check, even though my roommates told them they dont have the cash.

Can the dealer do this?
What should my roommates do?
Any other advice?

Simple, don't write a check if you dont have the cash.

Agreed thats why I hate using my credit card for big purchases.
but now you are saying "shouldve,would've, could've"

Nope, they really cannot do anything that I know of.

Of course, my brain is wired differently, and this is the first thing I thought of.

Pretty sure they won't be able to actually cash it if there aren't sufficient funds. But at a minimum there will some bounced check charges for sure if they try. But as stated, writing check with insufficient funds is not a good thing to do.

Knowingly accepting a post-dated check is a type short term loan offered by the car dealership. It's a promise of money in the future. If the check is still non-sufficient funds by the date written on the check, legal civil action can be taken against "your roomates".
This could be additional charges, fees and damage to "your roomates" credit rating.
Collection agencies have a lot of ways to make life difficult to people who owe money..garnishment of wages etc..
Best course of action is to keep the line of communication open and cordial with the dealership.

My gf suggested that they call the bank and put a stop on it -is that possible?

That costs money, and they could take legal action against you if you did it.

Hmm seems like they are in hot water unless the dealer changes their mind.
