Are Nannie’s ever truly off in SS 1LE
Took my car out today. I held traction control off for multiple seconds in track mode until I got “ESC OFF”. When flooring it from a roll in 3rd and 4th gear it feels like the car is still holding back trying not to let the tires spin. It feels like it hesitates, makes that PTM buzzing sound and then goes.
I don’t know if there’s just an issue with my car or if Nannie’s are never truly off in this car. The car does not “just go” when I floor it. It seems like it sense potential wheel spin, adjusts and then goes. It’s really annoying and it’s a big reason I’m ready to dump the car, but if it fully would go when I floor it, I’d keep it.

Nope, nannies are never really off. I've heard some named their nannie "Karen". Please post pics of your car, I'd like to see it before I buy it

Whether you are automatic or manual, it doesn't matter. There is a lot of torque management and transmission limitation implementation in order to keep power rained in and to keep you from spinning out into a ditch. If you really want all nannies removed or limited you will need a full blown tune.

Thank you ZLRob. That answered my question. Torque management is limiting the car from getting full power when commanded and there is nothing wrong with the car it seems like.

Torque management - to the extent that it exists in the factory tune - is not "nannies." It's not there to save the driver from himself, but rather to limit the stress on driveline parts. With that said, my car "just goes" in 1st gear if I floor it. It will happily break traction, and I can spin my tires without much effort.
I believe the OP isn't fully turning off his nannies. You have to hold the "traction off" button for at least 5 seconds:
It also doesn't matter what mode you're in. Also, you can't use cruise control in this mode. Here's a video that explains all this.

In my non-1LE SS I did not have this issue. It just went and it felt a lot more savage. I know part of that is due to the suspension being worsely damped but it did not hesitate like this car does.

Unplug two wheel speed sensors. It will force the ABS/TCS completely off because it will have no idea what those two wheels are doing so any type of correction could potentially make your situation worse. You will have a lot of lights on in your cluster but it will truly be off at that point

I don't think the tune changed very much, if any, throughout the 6th-gen model run. The only reason the ECM changed in 2019 was because the communication protocol within the car was changed from MOST to an Ethernet-based one. I can tell you I've had my 2020 SS 1LE for all 6 years it's been alive, and I track/autocross/timetrial it extensively. I've never experienced any of what the OP is talking about. In fact, one of it's delightful traits is that it pulls almost the same from any RPM, and it's really responsive. A good local friend also has a 2024 and we've co-driven each other's cars, and they both feel identical.
Something isn't right with the OP's car if it's making the farting noise these cars do when traction control kicks in. That 100%, absolutely, never ever happens in my car with the nannies off. Ever. And it very much should not happen in the higher gears where there is no wheelspin.

I really thought the only change was with the tune in which they crackle and pop a lot more 19+. Didn’t know if anything else in the calibration changed or not.

The ECM didn't change in 2019 the TCM did for Auto trans. 2016 was the only year for the E92 ECM. 2017 the E92a was released and it's pickier about specific things in regard to emissions and TCS. I know for fact on my 2016 if I hold down the TCS button until both TCS and Stabilitrak lights up all Nannies are off. You can't change anything in the tune to negate any of this. These are BCM functions.
That being said your 2023 should allow you disable TCS to the point where it will let the tires spin if you are going straight. Stabilitrak might still intervene if you were to get sideways. The best thing to do is hook up HPtuners VCM scanner and data log to see if torque management is limiting throttle and/or spark.
