I was using a bit of hyperbole when I said "we were flying around." My instructor was a bit, but as for myself I can confidently keep myself in place with the stock seatbelts. However, if you watch the video I posted, It's quite obvious how much I am straining a lot to keep myself in the seat, even if my brain doesn't interpret that while I'm driving. I'm sure if my body was fixed in place, rather than me tensing up every corner, I could find a tenth or two.
Yes, the roll bar is a better and safer option, but the issue is the harness bar with fixed back seats and harnesses is a bad option. In a rollover, that combination is more dangerous than the factory seats and 3-point belts. The factory safety system allows the occupant to fold over to the side if the roof crushes. If you're in a fixed back seat, harnessed in, you're not moving out of the way and you're getting crushed. So, leaving it stock is OK, or cage/seats/harness. Anything in between is more dangerous than leaving it as is.

As DaveC mentioned, pull your seatbelt out all the way to engage the ratcheting locking function. Do this with the seat slider back and then move the seat forward to your driving position. When you are in your driving position (should be much closer to the wheel than street driving), the seatbelt should be uncomfortably tight on your chest. If you do this, it will hold you in pretty good. Not quite as good as harnesses, but certainly acceptable.
