I currently have the stock 5 split spoke wheels that come with the RS package with stock tires ('18 2.0t RS).

I am looking to purchase new wheels and I am wondering what size width will fit on my current tires?

The stock 245's that come on those 8.5" wheels are the ideal fit, so anything wider or narrower is obviously not ideal. With that said I personally wouldn't go wider on the wheel unless you go with a wider tire

So, let's say I tried putting 20x9.5s on with the stock tires...what would/could happen?

It would be really stretched. For several reasons I wouldn't even consider that. You might consider some SS wheels, and that would have the 9.5" wheel and a 275 tire
