Will I have enough fuel?

I want to go with a maggie 2300 but want to run e85(heard it was the best way to keep the cylinder temp the coolest). I do not plan on changing the pulley on that 2300 and will be adding a lt4 low and high pump lt4 injectors and a boost a pump.

You won't be able to run full e85. I've got the same setup, including a 32% cam and cannot run more than e60

As L78toLT1 mentioned, you will be limited to e60. I'm looking to do a Maggie as well, but saving for the 2650, or possibly waiting for the 3100 Maggie to be released for the gen 6 LT1 depending on what pricing I can find. I did tons of pricing comparisons between a near max effort DI fuel system upgrade vs keeping the stock LT1 fuel system and adding a complementary port injection. For me, the port injection seems a little easier on the wallet, so I'm probably going to be addressing all my fuel requirements by adding port injection system.

Yeah not looking to go that crazy, just wanting to add the base maggie 2300 power and wanted the e85 to help save the rings. Now thinking just drop the boost a pump and flex fuel sensor and save 700 bucks.

Yea, I wasn't looking to do anything crazy either, but love the fact that lunacy is just a belt and pulley away on the bigger blowers. I have learned that the bigger blowers run much cooler as the cooling bricks are much larger and much more efficient at dissipating heat. That's just me though, the 2300 is a great blower, but I can source a 2650 for not much more over a 2300.
