The oil pump isnt like the old years, it is a stator design that is run off of the crank shaft if my memory is right.
Really, I haven't noticed the gauge doing that since I purchased the vehicle back in March.

At low RPM's you dont need an insane amount of oil pressure, in order to push higher oil pressure it takes more power from the engine which affects fuel mileage. GM uses a 2 stage pump, runs lower pressure at lower RPM's and then ramps up once the RPM's increase.

Oil pressure should range between 29 and 46 PSI. Lower or higher and something isn’t right.

I lost an oil pump at 17K miles and my oil pressure varied between 20 and 80 psi leading up to the failure as it’s progressive.

I’ve done lots of research on this topic and highly recommend a visit to the dealer if your hot oil pressure is below 30 psi or higher than 50 psi.
