So they said the car hasn’t thrown any codes or any problems, they told me that it drove and accelerated fine, which I find hard to believe. They were telling me the lag was all normal, they compared to a ZL1’s acceleration as the ZL1 doesn’t lag, but the SS’s do. I do not know what to do from this point on.

Tell them you wanna test drive a new one or another SS on the lot and you will see what you have is VERY abnormal. Normal lag IS NOT what you are experiencing.
You have a MAJOR issue.

Take it to another dealership. It shouldn't lag like that. I have a manual so I have really no lag, but I've driven A8's with the LT1 in the vette and the SS and they have an almost instant response.
They should fix this issue for you. That is unacceptable. The dealer you went to, see if they have another SS on the lot with an automatic. Deceive however you want to, to get a test drive in it. Then you can tell service that the car on their lot, same motor and tranny, does not do what yours does and to try it out for theirselves if they don't believe you.
If they don't have one, drive another at a different dealer and then take your car in their after you test drive it, and you'll have that in your back pocket if they BS you and say they all "just do that". You can direct them to the SS you drove before speaking with service, right on their lot. Basically prove to them your car isn't driving like others by giving them an exapmple in front of them that they can't refuse.

Typing this at work so apologizes if its quick and rambly.

I think this is a heap of bull****, I'm sorry to hear this. Keep us updated though!

My honest thoughts on this pathetic car (sorry to other SS owners)

Major update everyone!
So had a “professional” drive the car, and he actually was a hell of a driver.
Took me around for ridiculous pulls, he was demonstrating everything, when he drove it, hd drove it perfectly with no problems, he didn’t even experience any of the lag issues. He did however show me what I WAS DOING WRONG!

I cruise in M mode in 6th gear at 50 mph, he floored it, NO PULL or POWER at all, he then dropped all the way to 2nd gear at the same 50mph, and it pulled like a mad dog. I never knew about this, he also told me that I shift a lot earlier before redline too many times to the point where I’m at 5-7th gear at 40 or less, which was another thing. I was inexperienced over it, he then explained to me about the lag in flooring it in Automatic mode, when flooring in automatic, the brief moment before it pulls, the ECU is downshifting to the lowest gear then pulling, he said it’s normal for automatic mode to have a brief delay before pulling when flooring. He also stated that when in automatic mode, you can press the downshift once, then hold it again and the car will AUTOMATICALLY drop to the lowest gear, he then floored it and it pulled! I didn’t know about the gear and speed thing. After all this, there’s still one last thing... there’s a “dead zone” when slightly hitting the accelerator in automatic mode.

The lag is just a spot in maybe the first 1/4 inch of pressing the pedal where nothing happens until you push past that lag point. Doesn't affect power just sort of awkward because the power is not linear at dead spot.

If you were driving in manual mode using the paddles/shifter to shift up and down then that explains everything. When you are in the lower RPM ranges you aren't using the proper power band. If you leave it in automatic and mash the gas you'll see a night and day difference. If you are in manual mode and plan on doing a pull just hold the paddle shifter down and it will put you in the proper gear and you will feel the pull.

So, you drive in "manual" mode in 6th gear, and then floor it while still in 6th gear and it has no power? Well, I'd say that makes sense. Just drive it in automatic mode and let the car decide what gear to be in, and your problem will be solved.
