3 dealers - 3 different trade-in values???
So I went around today to see what I could get for my 2016 Camaro (13k miles) to prepare to upgrade soon (2SS) and the first two inspected my car carefully, only to low-balled me as if they were doing me a favor, yet the last manager looked it over in less than five minutes (FYI - I do get my oil changed there) and he quoted me 6 grand over the lowest offer. Am I missing something? What gives?

All dealers operate independently.
Some give lowball offers to see what they can get away with. Some give lowball offers because they go deep on pricing and can't afford to give up high values on trade. Some give crazy off the ceiling values and then charge you MSRP. If you want a real idea of value take it to carmax.

CarMax (and almost every dealer) will lowball you. Go to KBB.com and run through “My Car’s Value” to get a range of values for your car, from trade-in to selling it yourself. When you’re at the dealers, look at the differences you’ll have to pay for each deal, not the selling price of the new car or trade-in value of your car - either of which can be adjusted to make the other number look better. Also be sure to ask about the incentives that apply to you, like the Chevy Conquest rebate and GM Employee Pricing. If you qualify for both of those, plus buy the car for invoice, you just saved more than $5,000.

Yea both dealerships and car max suck.
Carmax appraised my 2010 2LT RS for 10.5k, local dealership offered me $9k sold it on Camaro5 for $17K.

As far as I've seen, the 2LT tend to lose more quickly their value over the SS or even the LT. Maybe that's why?

Agree on NADA as a better tool than KBB for sure. I know when I went to my credit union for a loan on my 4th gen, they pulled out a NADA black book. Also, you might be getting quotes from dealers that like to use "live market pricing". So one day its worth one price and the next another.
