I wonder if editing the videos from PDR will remove the data logging?

I currently use VLC. But my "fix" for this (eventually) is a split mac w/ Windows so I can open up Cosworth toolbox, too.

The programs that I've used to edit videos DOES remove the embedded data.

Use YouTube's built in Creator Studio. It has that function.
