What happens if you end up mixing E10, E20, E30, E40 etc... then finally go past what your fuel system can handle (E-50), or is that not how it works? Would you need to siphon out and start over?

No. You wouldn't siphon it out, but if you're unable to dilute it by adding more 93 octane then you would just drive the car until you use some fuel and can add some 93 octane. You just wouldn't drive the car hard, you would drive it sensibly.
