Improperly torquing the rockers will not cause interference. You want to torque on the base circle of the cam to prevent pulling out the rocker bolt threads or undertorquing the bolt due to the additional forces exerted on the bolt by the valve spring. You can't induce piston/valve interference by over tightening the rockers. The only way to adjust lash is to alter the pushrod length or gasket thickness. If no material has been removed from the block or heads and you have stock length pushrods lifters and stock thickness head gasket then you either have the cam improperly timed or you need to fly cut your pistons.
