HP/Torque guesses? (current build)

I'm betting 480 wheel and 420 torque on pump gas

Nightfury cam+LS3 conversion
Johnson lifters, new pushrods and springs
Flexfuel kit
Vararam ram air intake
LS7 injectors
3200 stall
Kooks 7/8 headers w/ straightipipe and custom x-pipe

Maybe on a dynojet. That's a high number for an auto without any headwork. Depending on which mustang dyno I use. I put down between 460 and 470 hp @ 6600rpm on E85. Which would be in the low 520 ish hp on a dynojet.

I even took my heads in to a shop for cleaning/inspection...I really should have had them improved at the same time lol

That’s very very similar to what I have. I came in at 465.xx rwhp on E. I forget the torque, it was way lower than I expected.
