I didn't want to say anything, but I was going to say that torque was pretty good, but HP was low.
I figured we have the same mods. That said however, his peak torque is in the correct range which is 3500 rpm. Although mine peaked at 4000 I believe. Here's mine: Also bare in mind, his parts are more for torque gains than mine are. Also on an A8 I believe it is 6th gear is the 1:1 gear for dyno testing.

Torque should peak at 4400-4500 rpm for the LT1, if it doesn't, there may be some limitation or restriction still at play.

OPs HP looks good, but on a typical NA LT1 dyno graph I have not seen 62-64 lb ft of more torque than HP. I agree with another post here that peak Horsepower and Torque #s usually stay pretty close to each other. I feel OPs torque is out of whack here.

RPM of horsepower and torque peaks , 1 pull on 93 octane, other pull on E70, same day about 1 hr apart. This just helps verify approx horsepower with similar bolt ons. My car has no headers, secondary cat delete xpipe, Borla R axle back versus attack, stock air box with LT2 unported intake manifold. The Peak horsepower #s are similar to the OPs on 93 and E. Torque #s inline with HP #s
