Reprogramming ethanol

Good morning,
Is it harmful to drive permanently on 100% ethanol, or do you have to fill up with E98 from time to time?
I had programmed it on ethanol and the engine grazes, when I came back from programming, I was running on gasoline and it started to graze.
I contacted the person who did the programming and they replied "you have to put the original filter back" (I had installed a K&N filter and I had no problem).
Do you think he's right, it's the air filter causing the chatter?
I was told that the 2.0 turbo engines were not receptive to ethanol, is that true?

No, it is already a very mature solution for LTG engines to run on ethanol fuel.
