Have it in either sport or track...take off aggressively from a stop, usually kicks in within a few secs.

I actually tinker with various custom modes.. Like, you have have Sport MRC, with Tour Steering and have it in Track mode for the rest. It doesn't beat you to death, it has light input, but the throttle and shifting are much more in line with what I like. However, just know that PSM will kick in sometimes when you don't want it.. and you'll have a high RPM revving engine that seems stalled here for a bit unless you manually exit it.
Good advice - I need to figure out how to custom set-up Tour steering because Track steering is artificially heavy

It will be in the Setup/Settings Menu on your MyLink. I forget the sub-menu to show Steering, Mag Ride (if equipped) and Exhaust (if equipped)

But, for me, both my Steering and Suspension have Follow Drive Mode, or manually set to the specific mode I want.

Pg 219 - 226 should have most of what you're looking for along with the Drive Modes and what they change.

There's a lot to copy/paste or type.

Best morning commute I've ever had, this car is awesome
Totally agree

I'm going to have to try the launch control in competition mode. I tried launch control normally and it left the line like such a pooch.

Launch Control is hit and miss. I've been using it, but then it really killed a ton of power when I was playing around with a GT350, so I ended up just turning it all off and leaving it up to my right foot. I think I'll stick with that from now on. Once I get a drag radial on it, I will give it another shot and see what happens.
