You can track pretty much any car, as long as they are safe to run. (Many organizers don't allow trucks and SUVs because of the high center-of-gravity)

I've ran track with anything from Dodge Neon (not SRT4, just regular Neon) all the way to Ferrari 458 and McLaren Mp4-12C.

You can have plenty of fun with V6 cars. If it's your first track day, last thing you miss is "more power" - that can screw you up faster.

When you get your Camaro, do yourself a favor and try a track day at least once.
Out on track, you meet all the enthusiasts and they will help you with any question you have.
It is the most fun you can have legally, with your cloth on.
