275/40/19 or 285/35/19
Looking at these two size tires for my 2017 SS on my new wheels. 19 x 9.5 +25
The 275/40/19 actually keeps closest to the stock diameter. Any experience with these.... Thanks in advance...

Ya you're wider than the recommended width's there if that matters to you. That 285 contact won't be "285" when mount on a rim that is too narrow for it. Can be done, not recommended probably. 9.5 was a poor choice if you wanted wider tires.

The 9.5 inch width will fit a 275 tire no issue and still be in the recommended widths.

You should also look into the load ratings, and if possible avoid using a tire with a lower load index than whatever your car's OE tire size(s) were.
XL and SL load indexes are not the same (this matters), and small differences in rated load can be accommodated via slightly different inflation pressures. A 275/40 is actually a bigger tire than a 285/35-19 in terms of load capacity at any given pressure is concerned Norm

Michelin's website says 285/35/19 will fit on a 9.5" rim; that is actually the min. recommended width, so assuming whatever tire you buy is similar, there's likely no issues there.
That said, the 285/35/19 are 0.8" smaller diameter than the 275/40/19, and therefore your fender/wheel gap will get larger due to the smaller tire, and your speed will be off if the stock height is closer to the 275/40/19. Additionally, for a given width, a smaller diameter tire has a smaller traction patch, so the actual gains of going to the 285 would be somewhat offset by the 35 profile compared to the 275/40. I would like 285s but don't want the smaller dia. tire, I wish they made a 285/38/19 - I'd buy that.

Wider is better. 275 is too narrow and from the rear looks like a base V6

Tires and wheels are mounted. No issues...car is dirty will get it cleaned up.
