I am curious if you might be venting oil out thru the crankcase somewhere? Like there was a catch can with check valves not installed correctly

You say your car was 8 quarts of oil low, and that you added oil to it, but you "have not checked for leaks"? If you were truly 8 quarts low, park that thing until you figure it out. Rolling around on 2 quarts of oil is very likely damaging the internals of your engine. It may not break immediately, but you are definitely shortening it's life span.

Sounds like your manifold gasket has walked. Your sucking oil somewhere... or PCV system.

I think only 2 qts in the oil pan would cause some pump starvation going around turns. That should show on the gauge and maybe even throw a warning. Just seems like a small amount of oil for such a big pan.

You are burning a qt every 375 miles but no odor or blue smoke, and no drips under the car.
I like you idea of checking the level frequently. I would probably do it every day.
If you have a friend who is pretty car savvy, I would ask him/her to follow you around while you do some accelerations and cruising. See if he/she picks up any trace of blue smoke or oil burning smell. I can usually notice when I am following a car with such issues.

All good ideas brother I’ll do that today . And there is a strong oil burning smell !

Surely the LT-1 has a low oil indicator light or DIC warning? And if so being 8 quarts low should trigger it.... Or does it not have any warnings for low oil?

Yep...that's why I will do nothing to mine except a drop in K&N filter and maybe a port TB later. I have an extended warrant to 75kmi or 5 years. Doing nothing to mess it up.

I missed the bit about your friends noticing the smell.

The plugs you pulled on 1, 3, and 5... how did they look compared to the rest?

I am wondering what could have been damaged with the header install. PCV valve or vent?
Check the dipstick after the car has been running. See if there is any foamy oil or bubbles.
Also, you can try running the engine with the dipstick out. See if there is any pressure caused by a blocked PCV valve.

Check your rotofab install to make sure all the PCV system parts are intact. At about 5:00 in this video he goes over the parts:
