That is from my 2021 LT1, my 2016 LT V6 had the same layout. Am surprised the SS cars cannot access a numerical water temp reading. My 2015 stingray and my 2019 Grand Sport I could also access a numerical water temp read out thru the DIC

I don't have it on my 2018 2SS either, even though the manual specifically mentions this page...
