There is a channel that only reports 84% in HP Tuners, so I like to use different channels. For the throttle opening I use Engine>Accelerator and Throttle>Throttle>Commanded Throttle Actuator, and I also log accelerator pedal with Engine>Accelerator and Throttle>Accelerator Pedal>Accelerator Pedal Position. This way I can see specifically where I'm telling the car (with my foot) to give me the horses, and whether the throttle is obeying or not. Also for your situation you could add torque management advance, found in Engine>Spark & Ignition>Advance>Torque Mgt Advance. These channels should show you if torque management is either closing the throttle, or pulling ignition timing.
