What you've described does not exist on the 6th gen (ie. special "feature" that maintains engine speed at 1000rpm when letting out the clutch from idle with no throttle). Your videos actually illustrate it not maintaining 1000rpm. All that's in play is GM's idle speed control strategy (to maintain idle speed when external load such as alternator, AC compressor clutch, or clutch engagement as you've described) -- the difference in your case is that your idle speed was set much higher than stock. All cars have an idle speed controls strategy in play.

I'd love to hear the explanation from Mike on this feature, but I suspect you guys are talking past each other. There's a reason why you're the only one who believes this special feature exists.
