Fluctuating Temp Gauge

Hello all. I've seen several threads pertaining to a zeroed out or "cold" temperature gauge and that usually being a faulty coolant temp sensor, but what about a gauge that only seems to be flopping back and forth?

Mine will sit around the standard 200-210 degrees, raise up, and then fall back down. It'll do that several times before rising up to the 260 range and the car alert going off. Typically, I've shut the car off either right as this happens or before. When I turn it back on, it'll sit at the normal mark again and repeat the process.

Could this also be a simple switch of the sensor? Or is this more indicative of the thermostat malfunctioning?

This sounds like a failing thermistor, which is the functional part of the coolant temp sensor.

Typically they fail open, but they can also drift.

There could also be air in the system if you had the coolant changed recently.

Interesting. It's only a $20 part so I guess worth it to change and see. From videos it looks like it's reachable with an extension and swivel. Is that the case as far as you know?

No changes to the coolant system in the couple months I've owned and this just started. Though, I will say the fan has been running in the "louder than you'd think it should" state since I bought it. I'll also say, the reservoir doesn't appear to be to the fill line

You could unplug it and check the resistance against the expected value. It is probably a 10k NTC thermistor and just check it with the engine cold (so about 70 deg) and then once warmed (so about 200 deg).
I'll see if i can find the chart in the repair manual. But charts for 10k thermistors are all over the web. This one's in celsius:

Here's the chart from the repair manual:
