Agree don't let them touch the paint, have them remove any shipping labels on the glass and temp PPF on the paint but don't let them wash it. If they keep it overnight ask them to park it inside away from the general public that doesn't care about your paint. I would also have it professionally detailed and PPF added ASAP but not by the dealer.

SS does not require drilling of the license plate bracket.

I agree with people about not having the car washed. My dealership was really nice about it and kept the car in the detail bay out of the weather and not having it detailed. My paint looks good so far with no swirl marks, just some dust. I'm waiting for the weather to warm up a little before washing the car myself.
Make sure that you get all of the accessories. I know it's exciting to get your new car, but you may forget something.

Make sure you go over every inch of the car, if they are standing around the car ask them to step away so you can see it unobstructed
