I would change it once a year minimum for piece of mind but it's probably not going to hurt anything. GM states to change it once a year due to people leaving their cars outside in different conditions. In a climate controlled garage or shop you could likely leave the same oil in it for years with next to no mileage on it and be fine.

If you start the car and never drive it, let it idle etc thinking you are doing it good, then change it yearly. Idling and not driving it is the WORST thing for it.
If you only drive it (more then 30 miles and at least 30 min drive time) and never let it idle, 2 yrs is no problem providing you are using top tier oil such as Mobil 1 or AMSOIL.
