Yes, these Gen2s are rated for 850 hp each ("per bank", see here).

Yeah

So far, so good, though, my car (and yours) probably don't have enough power to destroy them, as those are rated between 425 to 450 hp per cat. I figured I'd upgrade to the Gen2 if/when the engine needs to be worked on again.

I was reading about those CATS on your website, look pretty awesome. I’m certain it’s a technical oversite, but it says…. Are these CATS CARB legal, and then it says “YES” then correctly says they aren’t legal in CA. So unfortunately they are not CARB legal.

If that 425 - 450hp is measured at the crank, we're certainly at or near the limits.

Correct, the GESI Gen2 cats are “only” 49-state legal to the best of my knowledge.
