I am not a crew chief type, so cant really offer detailed scenarios except for the obvious: if your bigger bars have the same F to R ratio as the stockers then overall balance should be the same. If the bars are bigger up front then more understeer. If the bars are bigger in the rear, then oversteer.

Regardless of the above, bigger bars will speed up weight transfer, especially in the front. So this should either result in quicker turn in, or the outside front tire getting murdered (especially if the inside front lifts too much). So, watch your outside front wear closely.
When i went with big bars on my Vette, the outside front tire was toast in just one day with no increase in pace.
But that was with stock suspension otherwise and obviously the bar rates were way too high.

Currently the car is pretty hard on outside tires. I would have thought that the outside tire wouldn't get as beat up as bar is keeping the car flatter.
I can smoke a new set op tires in one day, no problem!
