I put in an order for a 2021 2SS back on August 14th, but by the sounds of it they’ve already started production of the 2022’s as of August 17th. I am going to assume that my order will just be registered in as a 2022 or changed by the time GM allocates the order right? Either way I’d prefer a 2022, and the options I’ve picked don’t conflict will the model year changes.

GM will not automatically convert your 2021 order to a 2022 - your dealer might reinput it as a 2022 if they're doing their best to make you happy, but you can't assume it's going to happen automatically. Call your dealer and make sure they've submitted it as a 2022 to be safe.
