IME the ECU has a high and low octane table that is programmed from the factory. You won't ever get more timing then what is in that table(on non alcohol based fuels) combined with the IAT, Humidity, and ECT spark modifier tables.
What likely is happening is that the car is not getting full timing on pump gas. So the added octane is allowing you to get the full available timing.
