When even the 4cyl can get < 5 second 0-60 times with some basic mods and a tune, i think we've reached a point where the rules of thumb and opinions of gear heads from the 80's and 90's or older are no longer valid. None of the camaro's are underpowered econo-boxes that just look like a camaro. And if you're worried about being embarrassed on the street by some import, dont be. There aren't many cars out there that have sub 5 second 60 mph times.
You're comparing modded cars to stock. That is never a fair comparison. The 4 cylinder can be cheaply modded, but the 6? Can't just up the boost or do a simple turbo upgrade on that. So really, the V6 is the worst engine choice for the Camaro. But it isn't about how many cylinders you have...it's what the power level is at. If GM put a twin turbo V6 in there with the same power as the V8 then I would have no problem driving that. If they made an electric Camaro similar to the Tesla Model S, then I would prefer that to the V8--or any other engine for that matter.
