Just to play devils advocate, I'm going to defend the dealer in this situation. Most dealership service advisors or technicians don't give a damn if the car has been to a track day. It ultimately comes down to official warranty policy (and that is what's in their official warranty operations manual -- not the media). This service advisor only mentioned it because GM had somehow flagged the car in their system. If it were me and my car, I'd want to know that info. I don't see anything wrong with what he did. The real question is how it got logged on GM's system.
