I haven't messed with it in this car, but in all others there has always been a brightness knob or switch, and if you moved it up and down you could see the dash backlights dimming and brightening even in daytime conditions. Then when if it switches to night time it would dim from that position. There was always a "max" brightness setting on there too, and if it was clicked in to that position, it would stay at max brightness even after transitioning to night time.
So if there's a similar option/switch/knob, try switching it down a couple clicks while it's in day time setting. If my theory is correct, it will dim further when switching to night mode after that.

Great point. I would definitely check the DIM knob to the left of the instrument cluster. I thought there was a problem with my backup camera because when I was pulling out of the garage every time it would be black. Turned out that the dimmer was just all the way down. Minor adjustment and I can now see the camera image every time.
