I can't really help on 2SS vs 1LE. I went 2SS without ever driving a 1LE. I'm really happy with the 2SS and how it drives.

I can speak to car seats. I'm 6'4" and the rear of my seat touches the front of the back seat. I have a three year old in a forward facing car seat. It's the same big EvenFlo seat he's had for a few years now. His seat fits fine in the rear seat. It's a pain to put it in when I forget to lower the adjustable height back. When my older son rides front passenger and my three year old is behind him there is plenty of room. The one time we tried to take all 4 of us my wife was too far forward in her seat to be comfortable with my older son behind her. I had the driver seat forward enough to let my three year old sit behind me and it was technically driveable. This arrangement was only for a 45 minute drive. There's no way this would work as our primary car.

My three year old climbs into the seat himself. We are using the car seat belt and not the LATCH and harness. It's very easy to grab his seatbelt and buckle him in while I sit in the driver seat. I haven't tried using the car seat harness to buckle him in but imagine it would be fine since I got decent at doing it one handed.

The Camaro is a great three person car if at least one person is a very small child.
