Is the steering more communicative? Does the car feel lighter/more flickable? Brakes feel different?
The eLSD is a big question mark but I assume it only makes a difference in feel on acceleration.
Everything everyone said above is correct. The SS is a very solid performer, but the 1LE takes it to a whole new level! I had a 2SS as a loaner and you could feel the difference big time! Honestly the difference between the SS and the Mustang GT PP feels about the same as the difference between the SS and the 1LE.

This past saturday I got some instruction from SCCA Champ Darren Seltzer and I think his reactions in this video say it all. I think it's fair to say that was a very low speed technical course that was much more suited for small nimble cars. Even so Darren set the fastest times of the day in my car. The other cars consisted of stock and modified MX-5's, S2000's, MR-2, and a 500hp AWD eagle talon with wide tires!

BTW ever get that feeling where you can't stand the sound of your own voice on video? HAHA That's me right now! SHUT UP AND LET THE MAN TALK ABOUT THE CAR!!!
