I've not heard that about needing an update since Apple has done CarPlay updates already in other iOS updates. The updates have all been handled in the phone's OS and sent to the car via the USB connection.
As in the phone itself is running CarPlay, and sending the data to the car. As far as I understand how CarPlay works, the app on the car merely reads and pulls the data from the phone with the phone doing all the work (rendering, processing the UI touches, etc)

You're absolute right. Carplay is updated on the phone, but my understanding is that the DIC is something that GM would have to open up with an update of their own. Carplay can want to send to the DIC, but if that "screen" isn't available it won't be able to send.
I'd love to be wrong
