As far as I know, the plant is still up on saturdays and down on sundays. Regardless, it's not uncommon for cars to take longer than their TPW to build. Convertibles in particular seem to take longer from what I have seen on this forum. Hang in there, I know it's frustrating. The TPW is just a target, even if it is missed, you haven't been forgotten.
Having said that, get your dealer to call the DBC (Dealer business centre) and ask them what's up. That should hopefully shed a little light on what's delaying your car. Also, keep in mind that the system isn't very predictable. As you can see from this thread alone, Heath's car and mine had virtually identical timings from order placed to built but his was delivered a week before mine.
