All the great track drivers on this site started with V6 cars. They handle better on the road due to less weight than their V8 counterparts.

Take the car to some autocross or road course events and learn how to drive the car while doing high speed maneuvers. When you get a feel for where the car's limits are only then will you truly be able to drive the V8 versions and know how to FULLY enjoy the extra HP.
