I'm not a current V6 owner, but a former 5th gen V6 owner.
The V6 doesn't make huge torque, but it still does well, and torque curve is pretty flat from around 2,400 rpm and up, which is what you want. It will be a noticeable step up for you in terms of torque/performance...I think you'll notice if you test drive.
You have to keep in mind also, that today's computers do a lot to reduce torque under circumstances such as shifting, taking off from a stop, and such, to help protect the drivetrain and provide a smoother driving experience. I think for performance minded drivers, it can make the car feel like more of a slouch than it really is.
Not that my stock 5th gen V6 was a slouch, but I had a few mods to help eliminate throttle lag, and that car jumped when you touched the throttle, which really made the available torque stand out over what it did when stock.
