So the hopes that the officer doesn't show isn't an option, because even if his schedule prevents him from showing, a deposition will be taken, and since it in the hands of the D.A. it won't be Citizen vs. Officer, it will be citizen vs. the court.

That's not how it works here in Norcal.
As far as the officer is involved, it just another traffic cite. Officer gets a subpoena indicating the violator has contested the violation. No DA, misdemeanor, deposition or contempt involved.
Case dismissed if the officer is a no show. $800 fine and 30 day suspension of the violator is found guilty. End story.
