 I've got the down force set pretty high up front and in the rear... not sure if I need to make some suspension changes... the car is almost lowered all the way but not quite...

Are you using a wing? I had the same problems, decided I needed a little more downforce. Added the biggest wing I could buy, Now I'm glued to Nurburgring.

Only other thing I can think of is you got the suspension so screwed up that it's crazy.
Also, if you do see yourself getting into the grass on nurburgring, get off of the gas pedal!!! 50% of the time, you can save a spin on that track by letting off the gas, and slowly getting your car back on the track. Remember it's hard to pass on Nur. so don't go nutz, calm down, and focus on keeping the car on the track. After you learn the difficult parts of the track for your car, your confidence will rise.
