Those aren't robots, just automated fastening equimpment computerized to monitor torque and sequence. These are pretty much hand assembled. Just the tools are a little more high tech than a single socket or torque wrench.

I seem to recall maybe 5% of the buyers doing it..maybe closer to 2%.
I dont see someone flying from California to Michigan, pay for all the lodging and food, just to (PAY!) to build a LS7 or LS9. I mean..probably close to 8500 or 9,000 bucks? I could see it if the cars were really limited edition and super rare, but Corvettes, even Z06's..arent that rare. ZR1's are a bit slim still, tho.

People already spend big bucks to fly to Bowling Green KY for Museum Delivery. It's only $500 or so, but the expense to fly out and drive your car home is pretty popular.

When you put that way.........................LOL
Just look at it this way, many people on this site spent 5 large on Ground Effects and 21" wheels to make their cars unique or special. Being able to say, "I built my engine" and have YOUR NAME on the builders tag would just be another way to make your car special or different. Pricey, yes. But not much when you compare to some wheel tire packages or suspension upgrades Camaro owners are doing.
