Sounds like you got the right idea. I don't know of a serial to USB converter that currently uses USB C instead of the standard old school rectangular USB style plug so ya got me there, but if you can think of it, the chances are usually pretty good that it exists on the market somewhere.
Also, I see you are using a UEGO. What AFR sensor are you using on that thing? Bosch LSU 4.9?
