I think the coolant temp is normal.
If you didn't have a tstat, or it was stuck open, the coolant may not get to operating temp, unless you're on a road course. You'd see the temp go down noticeably after getting on a freeway due to the increased air through the radiator, especially in the winter. (I had a stuck open tstat on an old beater car and those were the characteristics I noticed.)
