It’s really annoying and it’s a big reason I’m ready to dump the car, but if it fully would go when I floor it, I’d keep it.

Whether you are automatic or manual, it doesn't matter. There is a lot of torque management and transmission limitation implementation in order to keep power rained in and to keep you from spinning out into a ditch.
If you really want all nannies removed or limited you will need a full blown tune.
