Throttle sensitivity when cold

Have done some research on this, but wanted to ask when I first leave for work in the morning when it has been cold out the throttle will be sensitive when going from a stop. it will be fine after it warms up more. what causes this?
I will just have to start warming it up longer I know before leaving now, I had been warming it up for a couple minutes in the garage.
was also researching the drive modes and is track a good mode to use in town driving? read it was the most linear mode for throttle mapping. I had been using sport for town and use touring on the highway for better mileage.
also just read about those soler throttle controllers you can get. do those really help? just plug it into the ecm port under the dash and put the screen on the dash? never used one of those before. thanks for any information!
