There are no problems with TC/PTM to run the recommended tire combo. I would not do 285/30-19 up front, its very short and reduces ground clearance and will look a bit silly.

275/35-19 and 295/35-19 is also an option. Or even 315/30-19 rear with a bit of negative camber can work.
I would really prefer to maintain the size stagger with smaller diameter in front and larger in back. Since I got the Apex 19x10 and 19x11 for a track wheel setup to reduce weight without any modifications to suspension, tire compound and fit are top priority. Would you suggest 275/35/19 and 295/35/19 in either Falken Azeris RT660+ or Yokohama Advan A052? Car gets driven infrequently, with almost all driving on mountain roads and track.
The other option would be to go 285/35/19 and 305/35/19 with Michelin PS4S/PSS for what seems like ideal fit. This would get a little more rubber on the road and perfect fit on rim, a good street tire, and a tire that is fine but not great on the track.
