To answer your question, yes simplicity and efficiency during the assembly process. In addition, can you image shipping a car with that wing on it and taking a risk it gets damaged?
Hypothetically, let's say that car was ordered by a dealer. Once it arrived at the dealership, the dealer "added" two options: window tint and body pinstripes. Those two dealer added options would not appear on the original Chevrolet window sticker so the dealer would create an addendum sticker listing those options and adding the cost to the final price of the car. The addendum would be displayed next to the factory window sticker. See the image below.
Factory options, even if dealer installed are different from dealer added options. I agree with what you are stating relative to dealer added options should not be considered factory options.
